  • 1 cup all-purpose flour

  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla
  • 1/2 cup Greek yogurt
  • 1 1/2 cup diced fresh strawberries
  • 6 oz. cream cheese – room temperature
  • 3 Tablespoons granulated sugar
  • 1 teaspoon vanilla
  • 1 teaspoon corn starch
  • 3/4 cup powdered sugar
  • 1 1/22 1/2 teaspoons milk

Instructions

  1. Preheat your oven to 425°F (220°C) and line a cupcake pan with paper liners.
  2. For the streusel topping, combine flour, light brown sugar, and salt in a bowl, then mix in melted butter until coarse crumbs form.
  3. In a large bowl, whisk together all-purpose flour, baking powder, and salt.
  4. In another bowl, whisk the egg with granulated sugar until combined; add Greek yogurt, vegetable oil, and vanilla extract.
  5. Fold the wet ingredients into the dry mixture gently until just combined; then fold in diced strawberries.
  6. Prepare the cream cheese filling by mixing softened cream cheese with sugar, corn starch, and vanilla until smooth.
  7. Spoon muffin batter into each liner, add cream cheese filling in the center, then cover with more batter.
  8. Top each muffin with streusel crumbs and reserved strawberry pieces before baking at 350°F (175°C) for 22-25 minutes.
  9. Let cool slightly before glazing with powdered sugar mixed with milk.
