  • 16 jumbo pasta shells
  • 15 oz ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 10 oz frozen chopped spinach, thawed and squeezed dry
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups marinara sauce

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook jumbo pasta shells in salted boiling water until al dente. Drain and rinse under cold water.
  3. In a mixing bowl, combine ricotta, half of the mozzarella, Parmesan, spinach, egg, garlic, Italian seasoning, salt, and pepper.
  4. Spread 1 cup of marinara sauce on the bottom of a baking dish. Fill each shell with the cheese mixture and place in the dish.
  5. Top with remaining marinara and mozzarella cheese. Cover with foil and bake for 25 minutes; uncover and bake for an additional 10 minutes.
