  • 1.5 cups sushi rice
  • 2 cups water
  • 1 pound ahi tuna (finely chopped)
  • 3 tablespoons Japanese kewpie mayonnaise
  • 2 tablespoons Sriracha
  • 1 avocado (sliced)
  • Toasted sesame seeds for garnish
  • Jalapeño slices for garnish
  • 1 teaspoon salt
  • 3 tablespoons rice vinegar
  • 1 tablespoon granulated sugar
  • 1 teaspoon sesame oil
  • 1 tablespoon soy sauce
  • 2 teaspoons lime juice

Instructions

  1. Rinse the sushi rice until the water runs clear. Combine with water, salt, rice vinegar, sugar, and sesame oil in a pot. Bring to a boil, cover, and reduce heat. Simmer for about 15 minutes until liquid is absorbed.
  2. Once cooked, cool the rice on a baking sheet lined with parchment paper.
  3. In a bowl, mix chopped tuna with kewpie mayonnaise, Sriracha, soy sauce, sesame oil, and lime juice until well combined.
  4. Cut cooled sushi rice into rectangles. Heat oil in a non-stick skillet over medium heat and fry each rectangle until golden brown (about 2-3 minutes per side).
  5. Assemble by placing crispy rice rectangles on a plate and topping them with spicy tuna mixture, avocado slices, sesame seeds, minced chives or scallions, and jalapeño.
