  • 12 oz penne pasta
  • 1 lb chicken breast
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 2 teaspoons Cajun seasoning
  • 1½ cups heavy cream
  • ½ cup grated Parmesan cheese

Instructions

  1. Cook the penne pasta in salted boiling water until al dente. Reserve ½ cup of pasta water, then drain.
  2. Season the chicken with salt, pepper, and Cajun seasoning. Sear in olive oil over medium-high heat until cooked through; set aside.
  3. In the same skillet, add butter and sauté bell peppers and garlic for about 3–4 minutes until softened.
  4. Stir in remaining Cajun seasoning along with heavy cream; simmer gently and mix in Parmesan cheese until melted.
  5. Combine cooked pasta and chicken into the sauce, adding reserved pasta water to adjust consistency as needed.
  6. Serve hot, garnished with fresh herbs and lime juice.
