  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups pumpkin puree
  • 3 cups vegetable broth
  • 1 cup coconut milk
  • Optional: 1 cup tofu, cubed
  • Fresh parsley or cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent.
  2. Stir in minced garlic and cook for another minute. Add smoked paprika, ground cumin, cayenne pepper, salt, and black pepper; toast the spices for enhanced flavor.
  3. Mix in pumpkin puree and vegetable broth; bring to a gentle simmer for 10–15 minutes.
  4. Blend the mixture until smooth using an immersion blender or by transferring it to a high-speed blender.
  5. Return to low heat and stir in coconut milk until heated through.
  6. For optional crunchy tofu croutons, bake cubed tofu tossed with olive oil and smoked paprika at 400°F (200°C) until crispy.
  7. Serve hot topped with crispy tofu croutons and fresh herbs.
