  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper
  • Salt and pepper to taste
  • 4 slices cooked turkey bacon
  • 1 ripe avocado, sliced
  • 2 slices pepper jack or cheddar cheese
  • ¼ cup pickled jalapeños
  • 2 brioche buns, toasted
  • ¼ cup mayonnaise
  • 1 tbsp adobo sauce (from canned chipotles in adobo)
  • ½ tsp lime juice

Instructions

  1. Flatten chicken breasts to an even thickness and season with olive oil, smoked paprika, garlic powder, cayenne pepper, salt, and pepper.
  2. Preheat grill to medium-high heat and cook chicken for about 4–5 minutes per side until the internal temperature reaches 165°F (74°C). Add cheese on top during the last minute of cooking.
  3. In a small bowl, mix mayonnaise, adobo sauce, and lime juice to create chipotle mayo.
  4. Toast brioche buns until golden brown.
  5. Assemble the sandwich by spreading chipotle mayo on both sides of each bun; layer with sliced avocado, grilled chicken with melted cheese, turkey bacon strips, and pickled jalapeños.
  6. Serve immediately alongside fries or salad.
