  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 box (8.5 oz) corn muffin mix
  • 1 large egg
  • 1/3 cup milk
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef with diced onion and minced garlic until fragrant.
  3. Stir in corn, black beans, and diced tomatoes; season with chili powder, cumin, paprika, and salt. Simmer for 5–7 minutes.
  4. In a bowl, combine corn muffin mix with egg and milk; stir until just combined.
  5. Spread the beef mixture in a greased baking dish and pour the cornbread batter on top.
  6. Bake for 25–30 minutes until golden brown.
