  • 100 g sourdough starter, active and bubbly
  • 70 g cane sugar
  • 1 large egg or egg substitute
  • 430 g bread flour
  • 5 g sea salt
  • 113 g unsalted butter, room temperature
  • 5 tbs unsalted butter, room temperature (filling)
  • 1/2 cup cane sugar (filling)
  • 2 tbs cocoa powder, unsweetened (filling)
  • 1 cup semi-sweet chocolate chips (filling)
  • 1/4 cup whole milk (topping)
  • 1/4 cup cocoa powder, unsweetened (topping)
  • 1 cup powdered sugar (topping)
  • 1 tsp vanilla (topping)

Instructions

  1. Warm whole milk and mix with bubbly sourdough starter and sugar until dissolved. Add egg and mix well.
  2. Gradually incorporate bread flour and sea salt into the mixture. Knead on a floured surface for 5-10 minutes until smooth.
  3. Place dough in an oiled bowl, cover, and let rise until doubled in size (4-6 hours).
  4. Prepare filling by mixing softened butter, sugar, cocoa powder, and chocolate chips.
  5. Roll out dough into a rectangle, spread filling evenly, then roll tightly into a log and slice into pieces.
  6. Let slices rise again for about an hour. Bake at 350°F (175°C) for 30 minutes until golden brown.
  7. Whisk topping ingredients together and drizzle over warm rolls before serving.
