  • 2/3 cup pumpkin puree
  • 1 large egg
  • 1/2 cup sugar (for rolling)

Instructions

  1. Whisk together flour, baking soda, salt, pumpkin pie spice, and black pepper in a bowl.
  2. In a mixer, beat butter until creamy. Add brown sugar, molasses, and pumpkin puree; mix for about two minutes.
  3. Incorporate the egg and blend well.
  4. Gradually add dry ingredients until just combined; do not overmix.
  5. Chill dough for at least 30 minutes.
  6. Preheat oven to 350°F (175°C). Roll dough into balls, coat in sugar, and place on parchment-lined baking sheets.
  7. Flatten cookies slightly and bake for 12-14 minutes until set.
