  • 2 pounds boneless skinless chicken breasts
  • 1 ½ tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp chili powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp ground coriander
  • 4 cups chicken broth
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cans fire roasted mild diced green chiles (4 oz each)
  • 1 bay leaf
  • 2 cans cannellini beans (15.5 oz each), drained and rinsed
  • 1 can pinto beans (15.5 oz), drained and rinsed
  • 1 ½ cups frozen corn, thawed
  • ¾ block cream cheese (6 oz)
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Season with ground cumin, salt, black pepper, chili powder, cayenne pepper, dried oregano, and ground coriander.
  3. Add the chicken broth, diced onions, minced garlic, fire-roasted green chiles, and bay leaf.
  4. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
  5. In the last two hours of cooking, add the canned beans and thawed corn.
  6. Once cooked, blend a portion of the chili for creaminess then shred the chicken and return it to the pot.
  7. Adjust seasonings if needed and serve garnished with cilantro.
