  • 2 lbs boneless skinless chicken breast or thighs
  • 1 onion, thinly sliced
  • ¼ cup chicken broth
  • 1 lemon, juiced (about 3 tablespoons)
  • 1 tablespoon olive oil
  • 4 garlic cloves, minced
  • 1 ½ teaspoons dried oregano
  • 1 ½ teaspoons dried thyme
  • 1 teaspoon fine sea salt
  • ½ teaspoon black pepper

Instructions

  1. Place chicken at the bottom of the slow cooker. Layer with sliced onion.
  2. In a bowl, mix chicken broth, lemon juice, garlic, olive oil, oregano, thyme, salt, and pepper. Pour this sauce over the chicken and onions.
  3. Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours until chicken reaches an internal temperature of 165°F (75°C).
  4. Shred chicken in the slow cooker using two forks to absorb the sauce and serve warm.
