  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 10 oz cremini mushrooms, sliced
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper, to taste
  • 8 oz cream cheese
  • 3/4 cup Parmesan cheese, finely grated
  • 1/2 cup Gruyère cheese, grated
  • 2 large eggs, divided
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. In a skillet, heat olive oil and butter over medium heat; sauté diced onion until soft.
  3. Add garlic and mushrooms; cook until browned and moisture evaporates.
  4. Season with thyme, salt, pepper; stir in cream cheese and both cheeses until creamy.
  5. Incorporate one beaten egg into the filling mixture.
  6. Roll out puff pastry on floured surface; cut diagonal strips along the sides while leaving the center intact.
  7. Spread filling down the center; fold ends in and braid strips over the filling.
  8. Brush with remaining beaten egg and bake for 20–22 minutes until golden brown.
  9. Allow cooling for 10 minutes before slicing; garnish with parsley.
