  • 2 cups medjool dates, pitted
  • 1 cup unsweetened shredded coconut (divided)
  • 2 tablespoons dark chocolate chips (divided)
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon almond butter (optional)

Instructions

  1. Preheat oven to 400°F. Spread shredded coconut on a baking sheet and toast for 5-10 minutes until golden brown.
  2. In a food processor, blend pitted dates, almond butter (if using), 2/3 cup toasted coconut, 1 tablespoon chocolate chips, sea salt, and vanilla extract until it forms a sticky dough.
  3. Roll the mixture into about 16 balls and coat each ball with the remaining toasted coconut.
  4. Store in an airtight container in the fridge for up to 1-2 weeks or freeze for up to three months.
