2 cups medjool dates, pitted
1 cup unsweetened shredded coconut (divided)
2 tablespoons dark chocolate chips (divided)
1/4 teaspoon sea salt
1/4 teaspoon vanilla extract
1 tablespoon almond butter (optional)
Instructions
Preheat oven to 400°F. Spread shredded coconut on a baking sheet and toast for 5-10 minutes until golden brown.
In a food processor, blend pitted dates, almond butter (if using), 2/3 cup toasted coconut, 1 tablespoon chocolate chips, sea salt, and vanilla extract until it forms a sticky dough.
Roll the mixture into about 16 balls and coat each ball with the remaining toasted coconut.
Store in an airtight container in the fridge for up to 1-2 weeks or freeze for up to three months.
