  • 1 tsp lemon juice (if no cider available)
  • 1/2 cup brown sugar
  • 1 and 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 cup granulated sugar (for caramel)
  • 6 tbsp salted butter, cubed
  • 1/2 cup + 1 tbsp heavy cream
  • pinch of flaky sea salt
  • 1/2 cup granulated sugar (for crumble)
  • 2 and 3/4 tsp cinnamon (for crumble)
  • 1/4 tsp nutmeg (for crumble)
  • 1/8 tsp allspice (for crumble)
  • 1/8 tsp ground cloves (for crumble)
  • 1/4 cup salted butter, melted (for crumble)
  • 1/4 cup light brown sugar, packed (for crumble)
  • 1 and 1/2 tbsp granulated sugar (for crumble)
  • 1/2 cup + 1 tbsp all-purpose flour (for crumble)
  • 3/4 tsp cinnamon (for crumble)
  • pinch of salt (for crumble)

Instructions

  1. Cream softened butter with sugars until smooth. Mix in vanilla and eggs.
  2. Combine dry ingredients and fold into the wet mixture to form dough. Chill for 30 minutes.
  3. Prepare apple filling by cooking diced apples with spices and sugar until tender.
  4. Make salted caramel sauce by melting sugar until golden, then adding butter and cream.
  5. Preheat the oven to 350°F and prepare crumble topping using melted butter, sugars, and flour.
  6. Bake cookies at 365°F for about 10-12 minutes. Once cooled, fill with apple mixture, top with crumble and drizzle with caramel.
