  • 1/4 cup salted butter, cubed (for apple filling)
  • 2 tbsp apple cider (or 1 tsp lemon juice)
  • 1/2 cup brown sugar, packed (for apple filling)
  • 1 and 1/2 tsp cinnamon (for apple filling)
  • 1/2 tsp nutmeg (for apple filling)
  • 1/4 tsp ground cloves (for apple filling)
  • 6 tbsp salted butter, cubed (for caramel sauce)
  • 1/2 cup + 1 tbsp heavy cream
  • A pinch of flaky sea salt
  • 1/2 cup granulated sugar (for crumble)
  • 2 and 3/4 tsp cinnamon (for crumble)
  • 1/4 cup salted butter, melted (for crumble)
  • 1/4 cup light brown sugar, packed (for crumble)
  • 1/2 cup + 1 tbsp all-purpose flour (for crumble)
  • A pinch of salt (for crumble)

Instructions

  1. Preheat your oven to 350°F (175°C). Cream together softened butter and sugars until fluffy. Add eggs and vanilla; mix well.
  2. Gradually incorporate flour, baking soda, baking powder, salt, and spices until a dough forms. Chill for 30 minutes.
  3. Prepare apple filling by cooking diced apples with butter and spices until tender. Allow to cool.
  4. Make salted caramel sauce by heating sugar until melted; add butter and cream gradually. Let cool.
  5. Form chilled dough into balls and place them on lined baking sheets. Bake for 10-12 minutes until edges are set.
  6. Once cooled slightly, fill cookies with apple filling, sprinkle with crumble topping, and drizzle with salted caramel.
