  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 4 large apples
  • 1 cup granulated sugar for caramel sauce
  • 1/2 cup + 1 tbsp heavy cream
  • 1 and 1/2 tsp vanilla extract
  • 2 large eggs
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 and 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1/8 tsp ground cloves
  • 1/4 cup salted butter for apple filling
  • 2 tbsp apple cider (or 1 tsp lemon juice)
  • 1/2 cup brown sugar for apple filling
  • Pinch of flaky sea salt for caramel sauce
  • 1/2 cup granulated sugar for crumble topping
  • 2 and 3/4 tsp cinnamon for crumble topping
  • 1/4 tsp nutmeg for crumble topping
  • 1/8 tsp allspice for crumble topping
  • 1/8 tsp ground cloves for crumble topping
  • 1/4 cup salted butter, melted, for crumble topping
  • 1/4 cup light brown sugar, packed, for crumble topping
  • 1 and 1/2 tbsp granulated sugar for crumble topping
  • 1/2 cup + 1 tbsp all-purpose flour for crumble topping
  • 3/4 tsp cinnamon for crumble topping
  • Pinch of salt for crumble topping

Instructions

  1. Preheat oven to 350°F (175°C). Cream softened butter, granulated sugar, and brown sugar until fluffy.
  2. Mix in eggs and vanilla. Gradually add flour, baking soda, baking powder, salt, and spices to form dough.
  3. For the apple filling, sauté diced apples with cubed butter and spices until tender.
  4. To make caramel sauce, melt granulated sugar until golden; stir in cubed butter and heavy cream; allow to cool.
  5. Chill cookie dough then scoop into balls. Roll in cinnamon-sugar mixture and bake for about 10-12 minutes.
  6. Once cooled slightly, create an indent on each cookie for the apple filling; top with crumble and drizzle with caramel.
