  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 24 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 3 cups peeled and sliced apples
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 2 tbsp all-purpose flour
  • 1 cup granulated sugar (for caramel sauce)
  • 6 tbsp unsalted butter (for caramel sauce)
  • 1/2 cup heavy cream (for caramel sauce)
  • 1 tsp sea salt (for caramel sauce)

Instructions

  1. Preheat your oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of a springform pan and bake for about 10 minutes. Allow cooling.
  2. Toss sliced apples with brown sugar, cinnamon, and flour. Spread evenly over the cooled crust.
  3. In another bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until combined.
  4. Pour cheesecake mixture over apples in the springform pan. Bake for approximately 60-70 minutes until almost set.
  5. Allow cooling at room temperature before refrigerating for at least four hours or overnight.
  6. To make salted caramel sauce: Melt sugar in a saucepan over medium heat until amber-colored; add butter and stir until smooth; carefully mix in heavy cream and sea salt.
  7. Drizzle salted caramel sauce over each slice before serving.
