  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic, roasted
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 tsp fresh thyme leaves
  • 1/4 tsp nutmeg
  • 1/2 cup grated parmesan cheese, divided
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Roast the garlic by wrapping it in foil with olive oil and salt, baking for about 30 minutes until soft.
  2. Grease a 9×13-inch baking dish with butter.
  3. Peel and thinly slice the potatoes; arrange them upright in layers in the prepared dish.
  4. In a saucepan over medium heat, mix heavy cream, milk, butter, half the parmesan cheese, thyme, nutmeg, salt, and pepper until heated through.
  5. Squeeze roasted garlic from skins into a paste and stir into the cream mixture.
  6. Pour the mixture over the layered potatoes and cover with foil.
  7. Bake for 40 minutes covered; then add remaining cheeses on top and bake uncovered for another 30 minutes until bubbly and golden brown.
  8. Let cool slightly before garnishing with fresh chives.
