  • 1 tsp olive oil
  • 2 pounds red potatoes (washed and cut into quarters)
  • 6 tablespoons butter
  • 3/4 cup half and half
  • kosher salt
  • fresh ground pepper

Instructions

  1. Preheat oven to 375°F. Cut off the top 1/4 inch of the garlic head, wrap in foil, drizzle with olive oil, and roast for about an hour until soft and golden.
  2. Place quartered red potatoes in a large pot, cover with cold water, add salt, and boil until fork-tender (about 15 minutes). Drain well.
  3. Squeeze roasted garlic cloves into the drained potatoes.
  4. Warm half and half and butter until melted; combine with potato-garlic mix along with more salt and pepper. Mash until creamy yet slightly lumpy.
  5. Serve garnished with fresh herbs or a pat of butter.
