  • 2 large eggs
  • 1 egg yolk
  • 5 tablespoons unsalted butter (melted)
  • 1/3 cup canola or vegetable oil
  • 1 teaspoon pure vanilla extract
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch-process cocoa powder
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 400°F. Spread halved cherries on a parchment-lined baking sheet and sprinkle with sugar. Roast for about 10 minutes until tender.
  2. Lower the oven temperature to 325°F. Prepare an 8×8 inch baking pan with non-stick spray and parchment paper.
  3. Sift together flour, cocoa powder, cornstarch, and salt in a bowl.
  4. In another bowl, beat sugar, eggs, and egg yolk until light and fluffy (about five minutes). Then mix in melted butter, oil, and vanilla.
  5. Fold the dry ingredients into the wet mixture gently until just combined. Add half of the roasted cherries and chocolate chips; fold together carefully.
  6. Pour the brownie batter into the prepared pan and smooth it out. Bake for about 40–50 minutes; edges should be set while the center remains slightly underbaked.
  7. Allow cooling completely before slicing into squares.
