  • 1 1/2 cups uncooked orzo pasta
  • 1 cup cherry tomatoes, quartered
  • 1/2 orange bell pepper, diced
  • 1/2 yellow bell pepper, diced
  • 1 cup diced cucumber
  • 1/4 cup chopped red onion (optional)
  • 1/4 cup crumbled feta cheese (or a vegan alternative)
  • 1/4 cup fresh basil, sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Cook the orzo in salted boiling water according to package directions until al dente (8-10 minutes). Drain and rinse under cold water.
  2. In a bowl, whisk together olive oil, apple cider vinegar, lemon juice, honey, garlic, Italian seasoning, salt and pepper.
  3. In a large bowl, combine cooked orzo with cherry tomatoes, bell peppers, cucumber, optional red onion, feta cheese (if using), and basil.
  4. Drizzle dressing over salad and toss gently to combine. Season with additional salt and pepper if needed.
  5. Serve immediately or refrigerate for up to 3 days for flavors to meld.
