  • 1/4 cup light brown sugar
  • 1 1/2 tsp ground cinnamon
  • 3/4 tsp ground ginger
  • 3/4 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1/2 tsp ground allspice
  • 1/2 tsp vanilla extract
  • 1/4 cup vegetable oil
  • 1 tbsp maple syrup
  • 1/2 cup pumpkin purée
  • Optional add-ins: pumpkin seeds, cranberries, pecans

Instructions

  1. Preheat your oven to 160C (325F).
  2. In a large bowl, combine rolled oats, brown sugar, spices, and vanilla. Mix well.
  3. Add vegetable oil, maple syrup, and pumpkin purée; stir until evenly coated.
  4. Spread the mixture onto a baking tray without flattening too much to create clusters.
  5. Bake for 35–45 minutes, stirring every 15 minutes until golden brown and crisp.
  6. Allow granola to cool completely before storing in an airtight container.
