  • ¼ Cup granulated sugar
  • ½ Cup pumpkin puree
  • 1 large egg
  • 1 Teaspoon vanilla extract
  • 2 ¼ Cups all-purpose flour
  • 1 Teaspoon baking soda
  • 1 Teaspoon pumpkin pie spice
  • ½ Teaspoon salt
  • 1 Cup chocolate chips
  • 1 Cup mini vegan marshmallows
  • 8 graham crackers (broken into small pieces)
  • 1 Teaspoon food coloring (orange, optional)
  • ½ Cup chocolate chips (for topping)
  • Additional mini vegan marshmallows (for topping)
  • Crushed graham crackers (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in pumpkin puree, egg, and vanilla extract until well combined.
  4. In another bowl, whisk flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually mix dry ingredients into wet mixture until just combined.
  6. Fold in chocolate chips, mini marshmallows, and broken graham crackers.
  7. Scoop dough onto prepared baking sheet about 2 inches apart.
  8. Top each dough ball with additional marshmallows and chocolate chips.
  9. Bake for 12-14 minutes until edges are golden and center remains soft.
  10. Cool on the baking sheet for a few minutes before transferring to wire rack.
