  • 6 8 inch Tortillas
  • 1/2 cup Granulated Sugar
  • 1 tsp Ground Cinnamon
  • 1/3 cup Butter (melted)
  • 4 oz cream cheese (softened)
  • 1/4 cup powdered sugar
  • 3/4 cup canned pumpkin puree
  • 1/2 tsp pure vanilla extract
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 cup Heavy Whipping Cream
  • 2 Tablespoons Powdered Sugar
  • 1/2 teaspoon Vanilla Extract
  • Pecans for garnish (chopped)

Instructions

  1. Preheat your oven to 400°F.
  2. Cut tortillas into rounds using a cookie cutter. Mix sugar and cinnamon on a plate.
  3. Stab each tortilla with a fork, brush with melted butter, and coat in the cinnamon-sugar mixture.
  4. Bake tortilla rounds in an upside-down muffin tin for about 10 minutes until golden brown.
  5. Beat cream cheese and powdered sugar until smooth; mix in pumpkin puree, vanilla, and pumpkin pie spice.
  6. Whip heavy cream with powdered sugar until stiff peaks form.
  7. Fill cooled taco shells with pumpkin mixture, top with whipped cream, and garnish as desired.
