  • 1/2 cup pumpkin puree
  • 1/4 cup milk (dairy or plant-based)
  • 1/4 cup melted butter or vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup chopped pecans
  • 1 1/2 cups very hot water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix flour, baking powder, salt, sugar, cinnamon, nutmeg, and cloves.
  3. In another bowl, combine pumpkin puree, milk, melted butter (or oil), and vanilla.
  4. Pour the wet ingredients into the dry mix and stir until just combined; transfer to an 8-inch casserole dish.
  5. In a separate bowl, blend granulated sugar, brown sugar, and pecans; sprinkle on top of the batter.
  6. Pour very hot water over the mixture gently without stirring.
  7. Bake for about 40 minutes or until the center is set; cool for about 5-10 minutes before serving.
