  • 2 cups heavy cream
  • 1/3 cup granulated sugar (plus extra for topping)
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt

Instructions

  1. Prepare mini pumpkins by cutting off the tops and scooping out seeds; alternatively, use ramekins.
  2. In a saucepan, heat heavy cream and granulated sugar over medium heat until steaming.
  3. In a bowl, whisk together egg yolks, vanilla extract, pumpkin puree, cinnamon, ginger, and salt until smooth.
  4. Gradually mix hot cream into the pumpkin mixture while whisking continuously.
  5. Pour mixture into prepared pumpkins or ramekins and place in a baking dish with hot water for even cooking.
  6. Bake at 325°F (160°C) for about 30 minutes until set but slightly wobbly in the center.
  7. Cool completely before refrigerating for at least two hours or overnight.
  8. Caramelize sugar on top just before serving using a kitchen torch.
