  • 4 pounds boneless beef shoulder
  • 1 large yellow onion
  • 1 (12-ounce) can ginger beef broth
  • 12 cups BBQ sauce
  • 1 pound elbow macaroni
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 2 cups whole milk
  • 4 cups shredded sharp cheddar cheese

Instructions

  1. Place the trimmed beef shoulder in the slow cooker or Instant Pot. Layer sliced onion on top and pour in ginger beef broth.
  2. For slow cookers, set on low for about 5 hours; for Instant Pot, seal and cook on high pressure for around 60 minutes.
  3. While the beef cooks, boil salted water in a large pot and cook elbow macaroni until al dente. Drain and set aside.
  4. In a saucepan over medium heat, melt butter and whisk in flour until smooth. Gradually stir in warmed milk until thickened, then mix in shredded cheese until melted.
  5. Shred the cooked beef with two forks and combine it with the macaroni and cheese sauce.
  6. Serve drizzled with extra BBQ sauce for added flavor.
