  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar, packed
  • 1 can (20 oz) pineapple slices, drained and cut into small pieces
  • Maraschino cherries, halved
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining it with parchment.
  2. In a bowl, mix melted butter and brown sugar; spoon 1 tablespoon into each muffin cup.
  3. Add small pieces of pineapple on top of the brown sugar mixture and press half a maraschino cherry in the center.
  4. Cream together softened butter and granulated sugar until fluffy. Beat in the egg and vanilla until combined.
  5. In another bowl, whisk flour, baking powder, and salt; gradually add to the wet mixture to form dough.
  6. Press 1 ½ tablespoons of dough over each topping in the muffin cups.
  7. Bake for 12-15 minutes until edges are golden; let cool briefly before flipping onto a cooling rack.
