  • 1 lb boneless, skinless chicken thighs
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tbsp lime juice
  • 1 cup fresh pineapple (cubed)
  • 8 small tortillas (flour or corn)
  • Optional toppings: sliced jalapeño, sliced avocado, diced red onion, chopped cilantro

Instructions

  1. Marinate chicken thighs in chili powder, cumin, paprika, and lime juice for at least 15 minutes.
  2. Grill the marinated chicken over medium-high heat for 6-7 minutes per side until cooked through.
  3. While grilling, prepare toppings by chopping red onion and pineapple and slicing jalapeño and avocado if desired.
  4. After resting the chicken for a few minutes, slice it into strips.
  5. Assemble tacos by placing chicken on tortillas and adding desired toppings.
