  • ¼ cup all-purpose flour
  • ¼ cup crushed peanuts
  • 3 tablespoons butter (melted)
  • ¾ cup brown sugar (packed)
  • 1 cup milk
  • 2 eggs
  • ¾ cup creamy peanut butter
  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chopped strawberries
  • ½ cup strawberry jam

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a small bowl, mix together the brown sugar, flour, and crushed peanuts for the streusel topping; add melted butter and refrigerate.
  3. In a large bowl, whisk together the packed brown sugar, milk, eggs, and creamy peanut butter until well combined.
  4. Add in the dry ingredients: flour, baking soda, and salt. Gently mix these together until just combined; add the chopped strawberries.
  5. Dollop spoonfuls of strawberry jam over your batter and gently fold it in to create swirls.
  6. Pour the batter into the prepared loaf pan and sprinkle with the streusel topping.
  7. Bake for 60-75 minutes, checking doneness with a toothpick.
  8. Let the loaf cool on a wire rack for about an hour before slicing.
