  • 2/3 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 1/4 cups cold unsalted butter, cut into small cubes
  • 1/4 cup brown sugar, preferably dark
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 5 cups pitted, peeled, and chopped peaches
  • 6 tablespoons heavy cream
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Preheat oven to 350°F (180°C) and grease a 9×13-inch pan or line it with parchment paper.
  2. In a food processor, combine 2 1/2 cups flour, 2/3 cup granulated sugar, and 1/2 teaspoon salt. Add 1 1/4 cups cold butter and pulse until coarse meal forms. Reserve 1½ cups for topping.
  3. Press remaining mixture into the pan and bake for 15 minutes until golden brown.
  4. Combine reserved crumb mixture with 1/4 cup brown sugar until clumpy for streusel topping.
  5. In a bowl, mix chopped peaches with 1/2 cup granulated sugar, 1/4 cup flour, cinnamon, and salt. Stir in heavy cream.
  6. Pour peach filling over crust and sprinkle streusel on top.
  7. Bake for about 45 minutes until bubbling and golden brown.
  8. Cool completely before slicing into squares.
