  • 2 pounds Yukon Gold potatoes
  • 2 cups heavy cream
  • 4 tablespoons unsalted butter
  • 1 tablespoon fresh rosemary (or thyme/sage)
  • 1 ½ cups grated parmesan cheese (plus more for topping)
  • 2 teaspoons salt
  • Black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a baking dish with 1 tablespoon of butter and sprinkle with 3 tablespoons of parmesan cheese.
  3. In a saucepan over low heat, combine heavy cream, remaining butter, herbs, salt, black pepper, and garlic base. Heat until melted and steam rises, then stir in most of the parmesan.
  4. Slice potatoes thinly using a mandoline and arrange them in the baking dish.
  5. Pour the cream mixture over the potatoes and cover tightly with greased foil. Bake for 45 minutes.
  6. Remove foil and bake uncovered for an additional 20 minutes until golden brown.
