  • 2 lbs red potatoes (washed)
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons herb seasoning (divided)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 400°F while melting the butter in a 9×13 baking pan.
  2. Cut washed red potatoes in half and score each piece lightly.
  3. In a bowl, mix grated Parmesan with 2 tablespoons of herb seasoning, salt, and pepper.
  4. Once melted, pour half the seasoning mixture into the pan and place the scored potatoes cut side down.
  5. Spray tops of potatoes with nonstick cooking spray and sprinkle with remaining seasoning.
  6. Bake uncovered for about 40 minutes or until tender and golden.
