  • 1 lb extra large shrimp (peeled and deveined)
  • 2 large egg whites
  • 8 tbsp potato starch (or tapioca starch)
  • 4 tbsp mayo
  • 1 tbsp honey
  • ½ cup walnuts (unsalted)
  • 22.5 tbsp evaporated milk
  • to ½ cup avocado oil
  • 1 bulb scallion (chopped)

Instructions

  1. Butterfly the shrimp by making shallow cuts along their backs for even cooking and appealing shape.
  2. Dip each shrimp into whisked egg whites, then coat with potato starch.
  3. Heat avocado oil in a pan until hot (350°F/177°C).
