  • 1 (3-5 lb) whole chicken (giblets removed)
  • 1 medium onion (peeled and halved)
  • 2 tablespoons avocado oil
  • 1 ½ teaspoons salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper

Instructions

  1. Allow the chicken to rest at room temperature for 30-60 minutes.
  2. Preheat oven to 425ºF (218ºC). Line your roasting pan with parchment paper.
  3. Place the chicken breast side up in the pan and pat dry.
  4. Stuff the cavity with halved onion; add garlic cloves or lemon wedges if desired.
  5. Mix avocado oil, salt, smoked paprika, onion powder, thyme, garlic powder, and black pepper into a paste.
  6. Generously coat the chicken with the seasoning mixture.
  7. Roast in the preheated oven for about 70-90 minutes, basting once or twice without basting during the last 20 minutes.
  8. Once cooked (internal temperature must reach at least 165ºF/74ºC), let rest for five minutes before carving.
