  • 1 whole chilled duck
  • ½ teaspoon sea salt (if duck is brined, do not add salt)
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon cracked black pepper
  • 1 sprig fresh rosemary
  • 2 sprigs fresh thyme
  • ½ cup orange juice
  • 2 tablespoons fig jam
  • 2 tablespoons maple syrup
  • 1 tablespoon soy sauce or coconut amino acids
  • 1 teaspoon balsamic vinegar
  • 1 tablespoon corn starch

Instructions

  1. Preheat your oven to 375°F (190°C). Rinse the chilled duck under cold water and pat it dry with paper towels.
  2. Rub the entire duck with sea salt (if using), garlic powder, oregano, dried thyme, and cracked black pepper. Place the fresh herbs inside the cavity.
  3. Place the seasoned duck breast-side up on a roasting rack set in a baking pan. Roast in your preheated oven for about 90 minutes.
  4. While your duck is roasting, prepare the glaze by combining orange juice, fig jam, maple syrup, soy sauce (or coconut amino acids), balsamic vinegar, and corn starch in a small saucepan. Stir and simmer until slightly thickened.
  5. When there are about 10 minutes left on roasting time, brush the figgy orange glaze generously over the duck and return to the oven until caramelized.
