  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1½ cups long-grain white rice, uncooked
  • 1 can (10 oz) Rotel diced tomatoes with green chilies, undrained
  • 2¼ cups chicken broth
  • 1 cup nacho cheese sauce, jarred or homemade
  • 1½ cups shredded cheddar or Mexican blend cheese
  • Chopped cilantro (optional)
  • Sour cream (optional)
  • Diced avocado (optional)
  • Jalapeños (optional)

Instructions

  1. In a large pot or deep skillet, heat olive oil over medium heat. Add the chicken pieces along with garlic powder, onion powder, chili powder, cumin, salt, and pepper. Sauté everything together for about 5–6 minutes until the chicken is mostly cooked through.
  2. Stir in the uncooked rice along with the entire can of Rotel (juices included). Cook for 1–2 minutes to give the rice a little toast.
  3. Add the chicken broth. Bring everything to a boil before reducing the heat to low. Cover your pot and let it simmer for about 20–25 minutes until the rice is tender and most of the liquid has absorbed.
  4. Once the rice is cooked through, stir in the nacho cheese sauce along with 1 cup of shredded cheese. Mix until everything is melted and creamy.
  5. Turn off the heat and sprinkle the remaining cheese on top. Cover again for about 5 minutes until that cheesy goodness melts beautifully over everything. Garnish with any optional toppings before serving warm.
