  • 1 lb ground beef (85% lean)
  • 3 ½ cups shredded cheddar cheese (separated)
  • 1 small yellow onion (diced)
  • 2 cloves garlic (minced)
  • 4 cups beef broth
  • 16 oz elbow macaroni (uncooked)
  • ¾ cup sour cream
  • ½ cup whole milk
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Shred cheddar cheese and set aside.
  2. In a large pot over medium heat, cook ground beef seasoned with salt and pepper along with diced onions until browned; drain excess grease.
  3. Stir in minced garlic, then add Worcestershire sauce and tomato paste.
  4. Pour in beef broth and uncooked macaroni; bring to simmer.
  5. Cover and cook for 10 minutes until pasta is al dente, stirring occasionally.
  6. Reduce heat and mix in sour cream and half of the milk; adjust consistency as desired.
  7. Gradually add 2 ½ cups of cheddar cheese until melted; top with remaining cheese.
  8. Cover again for 2-3 minutes until the top layer is melted; garnish with chopped parsley before serving warm.
