  • 1.5 pounds shrimp, peeled and deveined
  • 4 cups low-sodium chicken broth or vegetable broth
  • ½ cup white apple vinegar (optional)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • ½ cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Juice and zest of 1 lemon
  • ¼ cup chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil and butter in a large oven-safe skillet over medium heat. Add diced onion and sauté until softened, about five minutes. Stir in minced garlic and optional red pepper flakes until fragrant.
  2. Add orzo pasta and toast for one to two minutes. If using, pour in the white apple vinegar and stir briefly while scraping up any browned bits.
  3. Pour in the chicken broth along with lemon zest, salt, and pepper. Bring to a boil, then reduce heat to low. Cover tightly and simmer for 10 to 12 minutes until most liquid is absorbed.
  4. Gently add shrimp into the mixture and cover again for three to five minutes or until shrimp are pink and opaque.
  5. Stir in grated Parmesan cheese and heavy cream off heat until creamy.
