  • 3/4 cup sugar (maple/cane/coconut or maple syrup)
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup melted butter
  • 1 egg
  • 2/3 cup milk (or plant-based milk)
  • 1/2 cup sourdough discard
  • 1 1/22 cups fresh or frozen blueberries
  • 1/2 cup flour (for streusel topping)
  • 1/2 cup sugar (for streusel topping)
  • 1/4 cup melted butter (for streusel topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, whisk together melted butter, egg, milk, sourdough discard, and sugar until smooth.
  3. Sprinkle flour, baking powder, and salt on top of the wet mixture. Gently fold until just combined.
  4. If using frozen blueberries, toss them in flour before folding them into the batter.
  5. Line or grease a muffin tin and fill each cup about two-thirds full with batter.
  6. For the streusel topping: mix additional flour, sugar, and melted butter until crumbly; sprinkle on top of each muffin.
  7. Bake for approximately 29-30 minutes or until a toothpick inserted comes out clean.
