  • 1 baguette, sliced into 1/2 inch thick rounds
  • 1 tbsp olive oil
  • 250 g Baby Bella Mushrooms, thinly sliced
  • 2 garlic cloves, minced
  • 1/4 cup Marsala apple vinegar
  • 1 package Brie Cheese, sliced
  • Salt and pepper, to taste
  • 1 bunch fresh parsley, finely chopped for garnish
  • 1 dash crushed red pepper flakes, optional

Instructions

  1. Preheat oven to 375°F (190°C). Brush both sides of baguette slices with olive oil and toast on a baking sheet for about 3-5 minutes until golden.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Add sliced mushrooms and cook until golden brown (5-7 minutes). Pour in the Marsala apple vinegar and let simmer until reduced by half. Season with salt, pepper, and optional red pepper flakes.
  3. Assemble crostinis by placing a slice of brie on each toasted baguette slice and topping with the mushroom mixture.
  4. Return assembled crostinis to the oven for an additional 3-5 minutes until brie starts to melt.
  5. Garnish with freshly chopped parsley before serving warm.
