  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 pound mushrooms (cremini or button), sliced
  • ½ teaspoon dried thyme
  • Salt and pepper, to taste
  • 3 cups marinara sauce
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach leaves, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook lasagna noodles in salted boiling water until al dente (8-10 minutes). Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Sauté onions for 3-4 minutes until soft, then add garlic for another minute.
  4. Stir in sliced mushrooms with thyme, salt, and pepper; cook until tender. Add chopped spinach until wilted.
  5. In a greased baking dish, layer marinara sauce, noodles, ricotta mixture, mushroom-spinach filling, mozzarella, and Parmesan cheese. Repeat layers and finish with sauce and cheese on top.
  6. Cover with foil; bake for 25 minutes. Uncover and bake an additional 10-15 minutes until bubbly.
  7. Let cool for 10 minutes before slicing; garnish with fresh basil.
