  • 2 tablespoons holiday spice mix
  • 1/3 cup white sugar
  • 1 cup dried fruit blend
  • 1/2 cup candied mixed peel
  • 1 large egg
  • 1 cup buttermilk or plain yogurt
  • 3/8 cup melted butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix together the flour, baking powder, baking soda, salt, holiday spice mix, and sugar.
  3. Gently fold in the dried fruit blend and candied mixed peel.
  4. In another bowl, whisk together the egg, buttermilk (or yogurt), and melted butter.
  5. Combine the wet ingredients with the dry mixture and stir gently until just mixed.
  6. Spoon the batter into muffin cups lined with paper liners or greased well, filling each about three-quarters full.
  7. Bake for about 20 minutes until golden brown; a toothpick should come out clean.
