  • 1.5 lbs white fish fillets (cod, halibut, or tilapia)
  • 2 tablespoons olive oil
  • 1 medium red onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, halved
  • Juice and zest of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Grease a baking dish with olive oil.
  2. Toss onions, bell peppers, tomatoes, garlic, olives, and seasonings in a bowl. Spread the mixture in the baking dish.
  3. Place fish fillets on top of the veggies. Squeeze lemon juice over the fish and sprinkle with zest.
  4. Bake uncovered for 20–25 minutes until fish is opaque and flakes easily.
  5. Garnish with chopped parsley and serve with lemon wedges.
