  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, finely chopped
  • 4 ripe tomatoes, chopped
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • ½ tsp smoked paprika powder (optional)
  • ⅓ tsp turmeric
  • 1 tbsp tomato paste
  • Dash of salt & black pepper
  • 1 can (15oz) canned white beans (Cannellini, Navy, Great Northern)
  • 1 cup veggie broth
  • ¾ cup dry white beans (Cannellini, Navy, Great Northern)
  • 1 ½2 cups veggie broth

Instructions

  1. Heat olive oil in a pot over medium heat. Sauté finely chopped onion and garlic until soft.
  2. Stir in chopped tomatoes, ground cumin, paprika powder, salt, and pepper. Simmer for about 5 minutes.
  3. Add both canned and dry white beans along with veggie broth. For stovetop cooking, bring to a gentle boil.
  4. Reduce heat and simmer uncovered for about 20 minutes until thickened. For Instant Pot, seal and cook on high pressure for 10 minutes followed by natural release.
  5. Adjust consistency with additional broth if needed and stir well before serving.
