  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 1/2 cup milk
  • 3 large egg yolks
  • 1/4 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • 1/2 cup powdered sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper.
  2. In a saucepan, bring water and unsalted butter to a boil. Once boiling, add flour and salt, stirring until it forms a ball. Remove from heat and allow to cool slightly before mixing in eggs one at a time.
  3. Pipe the choux pastry onto the prepared baking sheet, spacing evenly. Bake for 20-25 minutes until golden and puffed. Allow to cool completely.
  4. For the lemon cream filling, whip heavy cream with sugar, lemon juice, and zest until soft peaks form. In another bowl, whisk milk with egg yolks and cornstarch; heat gently until thickened. Fold this into the whipped cream.
  5. Slice cooled eclairs open and fill with lemon cream. Top with fresh raspberries mixed with powdered sugar and lemon juice.
