  • 1/2 cup melted coconut oil

  • 1 cup fresh lemon juice (about 46 lemons)
  • 1 can (14 oz) sweetened condensed coconut milk
  • 2 tablespoons cornstarch
  • Zest of 2 lemons

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix rolled oats, flour, brown sugar, melted coconut oil, and salt until crumbly.
  2. Press two-thirds of this mixture into a greased baking dish and bake for 10 minutes until lightly golden.
  3. In another bowl, whisk fresh lemon juice, sweetened condensed coconut milk, cornstarch, and lemon zest until smooth.
  4. Pour the lemon filling over the baked crust, spreading evenly. Sprinkle the remaining crumble mixture on top.
  5. Bake for an additional 28-30 minutes until set and golden brown.
  6. Allow to cool completely before slicing into squares.
