  • 400 grams lean ground beef
  • 1 large egg
  • 100 grams crustless bread
  • 125 ml white grape juice
  • 100 grams onion (minced)
  • 4 garlic cloves (minced)
  • ½ teaspoon ground cumin
  • 1 teaspoon dried oregano (+ extra to serve with)
  • 2 teaspoons dried parsley (or fresh minced)
  • 1 teaspoon fine sea salt (+ extra for the sauce)
  • ½ teaspoon ground pepper (+ extra for the sauce)
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 cups hot water or stock (vegetable, beef, or chicken stock)
  • 810 tablespoons lemon juice
  • olive oil

Instructions

  1. In a large bowl, combine ground beef, soaked crustless bread, white grape juice, egg, minced onion, garlic, cumin, oregano, parsley, salt, and pepper. Mix until well combined.
  2. Shape the mixture into golf-sized meatballs and place them on a baking sheet.
  3. Heat olive oil in a skillet over medium heat; cook the meatballs until golden brown on all sides.
  4. For the sauce, melt butter in a saucepan; whisk in flour until golden brown. Gradually add hot water or stock and lemon juice while stirring until thickened.
  5. Add cooked meatballs to the sauce; simmer for a few minutes before serving.
