  • 1 teaspoon vanilla extract
  • ½ cup milk
  • ¾ cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 or 9×9 inch baking dish.
  2. Cream softened butter and granulated sugar in a large bowl until light and fluffy.
  3. Add eggs one at a time, beating well after each addition, then stir in vanilla.
  4. In another bowl, whisk flour, baking powder, and salt together.
  5. Gradually add dry ingredients to wet mixture alternately with milk until just combined.
  6. Gently fold in chopped peaches.
  7. Pour batter into prepared baking dish and smooth the top.
  8. Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool in pan for ten minutes before transferring to a cooling rack.
  10. To make the glaze, mix powdered sugar with milk until smooth and drizzle over cooled cake.
