Ingredients

Scale
  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 3 medium apples, peeled and diced
  • ¾ cup all-purpose flour
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan to form the crust.
  3. Beat cream cheese until smooth; add sugar and vanilla, mixing well. Incorporate eggs one at a time followed by sour cream until fully blended.
  4. Toss diced apples with brown sugar and cinnamon in another bowl. Fold in cornstarch mixed with water and lemon juice.
  5. Pour cheesecake filling over crust, then top with apple mixture. Prepare crumble topping by mixing flour, brown sugar, cinnamon, and cubed butter until crumbly; sprinkle over apples.
  6. Bake for 55-60 minutes or until set but slightly jiggly in the center. Cool completely before chilling in the refrigerator for at least four hours before serving.
